I miss Korea, yes, I do. I woke up eaaarly this morning and its foggy, grey and cold. No more waking up to the blue sky and the beaming sun. And the whole sun starting to go get low in the sky around 1430 its not a good thing. Days are getting shorter, and soon the snow will be upon us.

After a long day, sometimes one just want to make something quick, but nutritious. These “fiske pakker” ( Fish packets), are very simple, but so good.

2 persons

2 peeled potatoes
1 carrot (shavings or chopped)
1 green onion ( vårløk) chopped
Juice of 1/2 lemon
2 salmon files ( you can use any fish)
himalaya salt
lemon pepper
oil
————–
1.Pre-heat oven to 200 Celsius (350 F)
2. Chop the peeled potato, and carrots
3.Chop the green onions
4. Put potatoes, carrots, fish and green onions on a double layer aluminum foil.
5.Sprinkle salt and pepper over, and then the lemon juice.
6.Wrap up the aluminum foil, and put the wraps in the oven.
7. Bake for about 40 minutes.
