So todays recipe is a sweet one. It is Saturday after all:)
When we were in South-Korea, we went to a couple of Brazilian restaurants. And I was always looking forward to the end of the meal, when the waiter came out with a whole grilled pineapple. It was the best part of it. So I tried to imitate it. Even though I did not have a grill available at this time of year. I fixed the oven, and put it on the grill setting.
Serves 2-3 people
1 pinapple
1 dl (1/2 cup) palm sugar
1 tbs ground cinnamon
1 lime, juiced
Remove the skin from the pineapple, and cut it into quarters lengthwise. Remove the core. Put it all in a bag, and let it marinate in the sugar, cinnamon and lime juice. Marinate for 30 minutes.
Cook in the oven or grill until a little soft, 10-20 minutes.
Best served while hot, maybe with some ice cream on the side.
