You might have heard or read about this plant before. Yacon is a plant that is normally grown in Nothern and Central Andes. And is a member of the sunflower family. It has a sweet flavor. And have both nutritional and medicinal value. You can eat the yacon root fresh, stemed, baked or as the finished processed product such as syrup, powder, or jam.
There are many health benefits:
Diruetic: promotes urination and eliminates toxins.
Sweetener: contains a sugar type that does not get easily digested by the stomach, which again leads to that it does not spike the blood sugar levels. Low in calories.
Prebiotic:The sugar (FOS) contains a prebiotics. This does not get absoreb as sugar, but goes to the colon and ferments, stimulates the growth of benenficial bacterias in the gut.
Antioxidants:it contains three types of antioxidant: ferulic, chlorogenic, and caggeic acid. Antioxidants helps fight the free radicals in the body.

Can Yacon powder be used to make jam with other fruit?
How would it be for orange marmalade?
I might leave an opinion after 1/28/12, as I’ve begun a batch of Mandarin Orange Marmalade without any regular sugar.
I made applesauce with it, and it worked:) It gives it a sweet flavor, so it would work with your marmalade too. I use it in my oatmeal too. I use both the powder and the syrup. The yacon syrup has a little bit sweeter flavor than the powder. I have used yacon powder as the only sweetener in some of my muffins. It has been used in making jam and marmalade by others, but yes, let me know what you think. I would like to hear your opinion. Have a great evening:)
