<p>So for a brief second we had summer here.  But then winter came back. Summer!!!! Where are you, I miss your sunny face.  Todays recipe is simple to make, and there are several ways to make this one.</p>

<p>After a long day, sometimes one just want to make something quick, but nutritious. These &#8220;fiske pakker&#8221;  ( Fish packets), are very simple, but so good.</p>
<p>&#8212;&#8212;&#8212;&#8212;-</p>
<p>2 persons</p>

<p>2 peeled potatoes</p>
<p>1 carrot (shavings or chopped)</p>
<p>1 green onion ( vårløk) chopped</p>
<p>Juice of 1/2 lemon</p>
<p>2 salmon files ( you can use any fish)</p>
<p>himalaya salt</p>
<p>lemon pepper</p>
<p>oil</p>

<p>1.Pre-heat oven to 200 Celsius (350 F)</p>
<p>2. Chop the peeled potato, and carrots</p>

<p>3.Chop the green onions</p>

<p>4. Put potatoes, carrots, fish and green onions on a double layer aluminum  foil.</p>
<p>5.Sprinkle salt and pepper over, and then the lemon juice.</p>

<p>6.Wrap up the aluminum foil, and put the wraps in the oven.</p>
<p>7. Bake for about 40 minutes.</p>

<p>1 1/4 cup ( 3 dl) apple juice ( no sugar added)</p>
<p>4 dried dates</p>
<p>1 dried fig</p>
<p>1 handfull pumpkin seeds</p>
<p>1/2 cup ( 1 dl)  frozen peaches</p>
<p>1/2 cup ( 1 dl) plain yoghurt</p>
<p>1/2 cup (1 dl) orange juice</p>
<p><strong>Mix it all in your blender</strong></p>

				<content:encoded><![CDATA[<p>This article is not gonna have any pictures today. Ehem&#8230;I forgot that once a year you have to pay here on wordpress to be able to update pictures. And due to my busy life, it did not get paid, and now I don&#8217;t know how to fix it. But enough about that.</p>
<p>So  today I went to the doctor on my 6 weeks check up. Stiches (if you had any) gets checked, and everything below, and blood work, and if there should be anything els to do with the fact that you gave birth 6 weeks ago. As I was sitting at the waiting room, and of course..waiting. I over heard two very pregnant women that was about to pop at any moment.  They where talking about the taboo of talking about what happens after you have given birth.  And I must agree, it seems like a taboo.</p>
<p>One of them hadt talked to a friend that had kids from before, but the other  one had asked the mother without getting any real answers. Many people will not talk about it at all. I am lucky to have friends that has shared things with me so that I was not in the dark the first time or the second time. But I have heard about girls that was so mad at their family, mother, close once for not have told them about the &#8220;wonders of giving birth and the after math&#8221;. What is your view on this, is it something for every women to find out by them self?  Or should they get a heads up on somethings?</p>
<p>No pregnancy is a like, just as no woman, and no body is a like, but some similarities must there be, we are not different spices. We are all human.</p>

<p>So should I write an article on this, or&#8230;&#8230;</p>

<p>Spring is here. Everything is blooming. Yeay!</p>
<p>A little while back I made some &#8220;<a title="Clean Eating Baked Chicken Burger" href="http://alternativeeating.me/2012/02/21/clean-eating-baked-chicken-burger/">Clean Eating Baked Chicken Burgers</a>&#8220;. This is a different variation. Baked burgers are so much healthier than the skillet fried once. No fat is added, only the fat the the meat naturally has.</p>
<p><em><strong>Makes 6 patties</strong></em></p>
<p>3 tbsp chopped chives</p>
<p>3 garlic cloves, chopped</p>
<p>1/2 cup (1 dl) grape fruit juice</p>
<p>3/4 cups (2 dl) finely chopped mango</p>
<p>1 tsp himalayan salt</p>
<p>1/2 tsp pepper</p>
<p>1 lb (454 gr) ground turkey meat</p>
<p>2 egg whites</p>
<p>&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;-</p>

<p>Preheat oven to 350 F (175 C)</p>
<p>Mix it all in a bowl, use your hands.</p>
<p>Wet your hands, and on some parchment paper form 6 patties.</p>
<p>Use a wet spoon to flatten.</p>
<p>Bake for about 30 minutes</p>

<p>I made this dish both as muffins with spinach, and as a deep dish! As it is baked, it is a little healthier than &#8220;normal&#8221; mac &amp; cheese.</p>
<p><strong>Makes 12 muffins</strong></p>
<p>1 tbsp butter ( you can also use oil)</p>
<p>1 tbsp flour of your choice</p>
<p>1 cup (2.5 dl ) milk of your choice ( <em>an  option is also 3/4 cups (2 dl) milk 1/4 cup(1/2dl) sour creme)</em></p>
<p>1 garlic clove, finely chopped</p>
<p>2 cups ( 5 dl) grated cheese ( I used Norvegia and Jarlsberg)</p>
<p>2 eggs</p>
<p>4 cups ( 12 dl) cooked  macaroni( <em>I used durum wheat</em>)</p>
<p>7 oz (200 gr)  fresh baby leaf spinach</p>
<p>salt and pepper to taste</p>
<p>1tsp bouillon (powdered beef stock)</p>
<p>a pinch of nutmeg</p>

<p>Preheat oven to 400 F/ 200 C</p>

<p>In a small sauce pan, melt the butter, and add the flour, stir until thickens.</p>

<p>Stir in the milk and garlic. Bring to boil, while you stir. Add cheese, and stir until it is all mixed.</p>

<p>Remove the cheese sauce from the heat. And stir in the eggs until it is all combined.</p>

<p>In a large bowl combine the cheese sauce, spinach, and spices. Spoon the mixture into the prepared the muffin cups/tins.</p>
<p>Bake for  10-15 minutes. Or until slightly brown.  Let cool off for 5 minutes before serving.</p>

<p>The deep dish was made the same way minus the spinach ( I was out), but it had to  cook for a longer time.</p>

<p>So today I was in the mood for tuna.  I ended up making a tuna salad with a little twist.</p>
<p><strong>4 Servings</strong></p>
<p>1 can  (5 oz) /(140 gr)  tuna ( I used &#8221; wild planet&#8221; wild albacore tuna)</p>
<p>6 tbsp mayonnaise</p>
<p>1 tbsp parmesan cheese</p>
<p>3 tbsp sweet  pickle relish</p>
<p>1/2 tsp curry</p>
<p>1 tsp dried parley</p>
<p>1 tsp dried dill</p>
<p>1/2 tsp pepper</p>
<p>1/2 tsp salt</p>
<p>1/4 tsp garlic powder</p>
<p>1) In a bowl, stir together tuna, mayo and parmesan cheese. Season it with the spices. Taste <img src='http://s0.wp.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>2) I served this with toast (sprouted bread), tomatoes, cucumbers and spinach!</p>

<p>It was with tears in my eyes  that I watched the news last night here in Norway.  I have heard so much about the Boston Marathon through the Under Armour Community.  This is all so unbelievable. I have no words. All my thoughts and prayers go to everyone affected by this tragedy!</p>

<p>This is a do-over of an old recipe that  I did a loooooooong time ago.</p>
<p>As I have said before, I love chocolate. And this layered brownie is amazing, and so good.  This is a great thing to bring over to your friends or families, anyone who likes chocolate is going to love this one. I made this one for my husband to take with him to work, and some to be left over for us. A great Halloween treat.</p>
<p>This recipe was inspired by this &#8220;<a title="grasshopper brownie bar" href="http://www.loveandoliveoil.com/2011/02/grasshopper-brownie-bars.html">Grasshopper brownie bar</a>&#8220;. Remember the darker the chocolate, the better it is for you. Rich is antioxidants, and also in serotonin, that boosts your mood. Sooooooo many reasons why to eat some of it. It is Halloween, the day for candy. so why don&#8217;t you have some.</p>
<p>&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;-</p>
<p><strong>Ingredients:</strong></p>
<div>
<p><em><strong>Brownie base:</strong></em><br />
1 cup  ( 2.5 dl)  sorghum flour<br />
1/2 tsp salt<br />
1 tbs dark unsweetened cocoa powder<br />
4 oz (113 gr)  dark chocolate ,  chopped<br />
1/2 cup  ( 1 dl)  butter<br />
1 cup (2.5 dl)  cane sugar<br />
3 eggs<br />
1 tsp vanilla extract</p>
<p><em><strong> Butter cream:</strong></em><br />
3/4 cups  ( 2 dl) sugar<br />
2 tbs flour<br />
3/4 cup ( 2 dl)  milk ( <em>of your choice</em>)<br />
2 tbs  heavy cream (<em>Look in your store if they have a lactose free one, or non-dairy one</em>)<br />
3/4 cup (2 dl) butter<br />
1 teaspoon  lemon extract</p>
<p><em><strong>Chocolate glaze:</strong></em><br />
6 oz  (170 gr)  dark chocolate,chopped<br />
1/2 cup  (1 dl) unsalted butter</p>

<h3>Directions:</h3>
<p>1.For<em> the brownie base</em>: Preheat the oven to 325 degrees /about 170 C.</p>
<p>In a medium bowl, whisk together the flour, the salt, and cocoa powder.</p>
<p>In a separate bowl melt chocolate and the butter. Add in the sugar, and stir well. Remove the pan from the oven.</p>
<p>Stir in the eggs, add in the vanilla.</p>
<p>Add in the flour mix. Stir well.</p>
<p>Pour the batter in the prepared glass or light-colored metal 9-by-13-inch. Bake for 12-15 minutes. Brownies shouldn&#8217;t be all the way done. Let the brownies cool off.</p>
<p>2. <em>To make the butter cream</em> add sugar and flour together in a saucepan. Add the milk and cream. Cook over medium heat. Whisk  until mixture comes to a boil, and has thickened 5-10 minutes.Reduce the heat, add in the butter. Stir. Add the lemon extract.</p>
<p>3. Spread the filling evenly across the top of the brownie layer. Place the pan in the refrigerator, for about  45 minutes, while you make the chocolate glaze.</p>
<p>4.<em>The chocolate glaze</em>: In  bowl  combine the chocolate, and butter. Set the bowl over a saucepan of simmering water and cook, stir until the mixture is completely smooth.</p>
<p>5.Pour the mixture over the chilled butter cream layer and use a spatula to spread it into an even layer. Place the pan back in the refrigerator for 1 hour, or until the glaze hardens.</p>
