healthy eating my way (allergy friendly)

Coconut and Strawberry Muffins

If you like coconut and strawberries, these will go over very well with you. They are not very sweet.


1 dl coconut flour

1/2 dl unsweetened, medium coconut

1/4 tsp baking soda

1/4 tsp sea salt ( himalaya salt )

4 eggs

1/4 dl  coconut oil ( melted)

3 ts Lucuma ( or any other sweetener after your choice)

1 tsp vanilla ( extract or powder)

3 dl freshly cut strawberries

Also have some strawberries for decoration



1 dl créme fraiche or heavy cream

1 tsp agave nectar

Stir well together


Pre heat oven to 200 celcius


1.Combine all the dry ingredients

2.Combine all the wet ingredients in a separate bowl

3.Mix 1 and 2

4. Fold in the cut strawberries

5. Fill forms 3/4 with the batter

6.Bake for about 20 minutes (check  with a  toothpick or fork, if it comes out clean, it is done)

7. Cool of, and add cream and strawberries for decoration.
