healthy eating my way (allergy friendly)
I love chocolate, I do, and when I can add it to my cooking it is even better. And I also like muffins, since they are so practical, and easy to pack with me were ever I go. So I came up with this recipe.
Makes about 20 regular sized mufiffins, but only 10 big once.
200 g butter
4 tsp coconut oil
1.5 dl palm sugar( or sugar/sweetener of your choice)
(1tsp maca powder) (optional)
(2 tsp yacon powder) (optional)
2.5 dl spelt flour
1 dl almond flour
1 tsp baking powder
1 tsp baking soda
1 dl chocolate powder
1 tsp vanilla bean powder
Juice of one orange
100 gr of chopped chocolate
(2 tsp apricot honey ( heated up)) (Optional)
PS! If you want your muffins sweeter, just add more of your choice of sugar or sweetener.
Before you start pre-heat oven on 200 Celcius/ 350 Fahrenheit
1.Whisk eggs and sugar together until its light and fluffy.
2.Whisk in the melted butter/oil
3. Add all the other wet ingredients.
4. Add the dry ingredients
5.Taste the dough 🙂 I always do with chocolate:) To see if the taste is just right:)
6. Fill up muffin forms 1/2 full
7. Bake in oven for about 20 minutes, use a toothpick/fork to see if they are ready. If there is dough on the fork when you take it out, they are still not ready.
8. Set the muffins to cool off.
100 gr room temperature butter
10 tsp confectioners sugar
6 tbs unsweetened cocoa powder
1/2 dl whipped cream ( or just 5 tbs milk of your choice)
1 tsp vanilla extract
Mix this all together is a bowl, stir well together until the mixture is firm.
Spread it out on the muffins, And enjoy:)
