healthy eating my way (allergy friendly)

Zucchini and Okra

I made this recipe with flounder (fish), but you can also make it with tofu or chicken.  It got served with coconut rice.


1 cup of flounder (220 gr)

1/2 tsp salt

1/2 tsp pepper

1/2 tsp Italian seasoning

1 green onion

2 tsp fresh chopped chives

juice of 1/2 grapefruit

1 tbs oil of your choice

1 tsp dijon mustard

1/2 tsp rice vinegar

1 tbs cut chili and garlic

1 tsp black sesame seeds


Cut the fish in small pieces and  in a bowl add all the spices, green onions, chives, and other remaining things. Stir it well, and then add the fish. Let is sit for a while.  In the mean time:


1 cup fresh cut okra

1 zucchini cut in little pieces

1 tsp fresh chives

1 clove garlic


Heat up the oil and add garlic, chives and the seasoned flounder. Let it simmer for 5 minutes (depending on the size of the fish pieces).  Add the zucchini and okra, put the lid on and let simmer for 10-15 minutes until the zucchini is soft.
