healthy eating my way (allergy friendly)
Sometimes we all are pressed for time. This recipe is quick to put together, and quick to make.Since you can partial make it (the cooking for 15 minutes), and then later cook it for the last 30 minutes.
1/2 cup butter
3 cloves garlic, chopped
2 green onions, chopped
2 tsp fresh cut chives
6 oz fresh chopped spinach
5 medium size mushrooms, chopped
8 oz shredded cheddar cheese
salt, pepper and thyme (1/2 tsp each)
1 deep dish unbaked almond pie crust
4 beaten eggs
1 cup milk ( I used coconut milk)
1/2 tsp paprika
1/4 tsp salt
1. Preheat oven to 375 F
2In a medium skillet melt butter and add garlic, green onions and chives. Simmer for 2-3 minutes. Add mushrooms and spinach, and 1/2 of the cheddar cheese.
3. Pour the mix over the almond crust.
4. Beat eggs, and add the remaining ingredients in a bowl.
4.Pour on top of the cheddar/spinach, stir slightly. So that the mixtures combines.
5. Bake for 15 minutes
6. Take out, and add the remaining cheese, bake in oven for 30-45 minutes. Let rest for about 10 minutes before you serve this dish.
