healthy eating my way (allergy friendly)
A lot of people I know, including my self is always in a hurry to get up and out in the morning. These are perfect to grab and go. They are filling and oh so yummy.
This recipe makes about 8 scones.
2 cups spelt flour (or your choice of flour)
1/2 cup oats
1 tbs baking powder
1/4 tsp salt
1 tsp cinnamon
1 tsp vanilla extract ( you can also use ground vanilla bean)
1 cup cold coconut oil
1 cup blueberries
1/3 cup coconut milk
4 tbs maple syrup ( option here is palm sugar)
1 tbs flaxseeds
1.Preheat oven to 350F (200C)
2.Mix all the dry ingredients together
3.Mix in the coconut oil, to there is “sandy pearls” in the dough, or that all the coconut oil has been blended in well
5.Fold in the blueberries
6. Use a rolling pin and form the dough into a circle and cut (slightly) into triangles (see picture above)
7.Bake in oven for about 15 minutes, or until golden.
