healthy eating my way (allergy friendly)


You can buy these, but home-made is always better. Crumpets are a mix between pancakes and a bun, and so delicious. They are known as butters best friend, when they are hot, the butter just melts down in all the little wholes.  If you have a “English muffin ring” they look so much prettier, aka the picture above. But you can also just cook them like you would a pancake, on medium heat. They taste just the same. And due to me and yeast not agreeing, I use about 1/3 of how much yeast is supposed to be in this recipe.  Produce bought finished also tends to have a lot more yeast in it, just to make it light and fluffy, also a reason to make your own.


15 Crumpets

1 1/2 cup luke warm water

1 cup luke warm milk ( I used lactaid)

3 tbs butter

3 1/4 gluten free all purpose flour

1 cup almond flour

1/2 tsp yeast

1 tsp baking powder

1 tsp baking soda

1/4 tsp salt

1 tsp palm sugar


1.Mit all the wet stuff, and stir well as you add in the dry ingredients.

2. Have the eye on medium.

3. It will start bobbling, wait to it almost looks like little craters in the crumpets before cooking them. Then cook for about 1-2 min on the other side.

4. Serve while still warm, or put in toaster.
