Sweet potato quiche

These makes for a perfect post-workout dinner, high in protein and dietary fiber. And if you like sweet potatoes, you def. have to try them. In our household the 12 quiches that I made disappeared in no time.I cooked the sweet potatoes in the morning while I was eating my breakfast, so that when I came home in the evening they were ready to get mashed.


Makes 12 mini quiches

1 large sweet potato ( or 2 small ones)

6 eggs

1/2 tsp baking soda

1 tsp baking powder

1 cup cottage cheese

1 tsp fresh chopped chives

1/2 tsp salt

1/4 tsp ground cloves

1/4 cup grated Parmesan cheese


1.In a large pot, cook the sweet potato until soft, set to the side to cool of.

2.Preheat oven to 375 F

3.Peel, and mash the sweet potato, stir in the other ingredients.

4. Divide the dough between 12 muffin cups

5.Bake for 20 minutes, or until golden.

6. Let cool of before taking them out of the pan (about 10 minutes).

7.Serve with a salad
