healthy eating my way (allergy friendly)
They say that when you are restricted on food, it is easy to obsess over it, mentally. Remember, to enjoy the small things, and don’t be to hard on your self.
Serve this with some of your favorite ice cream.
Makes 4 servings
1/4 cup cocoa
2 tsp sorghum flour
1/2 cup milk
5 tsp yacon syrup ( or honey)
1/2 tsp vanilla extract
2 egg whites
1/8 tsp cream of tartar
1/4 tsp baking soda
1. Preheat oven to 350 F
2. In a saucepan, on medium heat, add milk, stir in cocoa and flour. Add yacon and stir for about 2 minutes, until thick. Add vanilla and set the pan aside.
3. Put the egg whites, the baking soda and cream of tartar in a mixer, and mix until soft peaks are formed.
4. Fold in the egg whites in the chocolate mixture. In the oiled ramekins or muffins cups divide your mix, and bake for 10-15 minutes, or until puffy.
5. Serve immediatley.
