Welsh Cakes with dates

These are inspired by frugalfeeding, I just had to try them out. And they were delish. I made them with dates, but you can’ t tell that it is.

4 dl spelt

1/2 dl cane sugar

1/4 tsp salt

1/2 tsp cinnamon

1/2 tsp nutmeg

1/2 dl soft butter

10 dates( chopped)

2 eggs

3 tbs milk ( of your choice)

1/2 tsp orange extract (or zest of 1/2 orange)

1/2 tsp lemon extract ( or zest of 1/2 lemon)

1.Pre-heat oven to 200 C

2.Mix together the dry ingredients, add the butter, and stir it well ( or use hands) until there is little crumbles.

3. Add in all the wet ingredients

4. Have some flour and put under you dough. Sprinkle some on the dough before using a rolling pin to thin it out. Until about 1 cm thick.

5. I did not have a pastry cutter, so I took a glass, and had some flour on it, and used that. Worked very nicely.

6.Put on a baking sheet and bake in the oven for  8-12 minutes. Until golden.

These work perfect with some jam.

And they are way cheaper to make your self, than going buying scones or cookies, which these can substitute. Yummy.
