A scent of Christmas- healthy pumpkin cookies

Today is the first Sunday of Advent. Its when the christmas star gets put up in the window, and we light the first purple candle. One out of four. Advent it the time and preparation for christmas. The word advent comes from the Latin word, and means coming.  The Christmas streets has been open, christmas markets started. And christmas is right around the corner.

I came up with this recipe to use the rest of my pumpkin that I had. As I made the cookies, I realized  that they almost looks like little buns. The whole house started smelling like christmas. MMMMM.I had a little frosting on them, but they taste excellent without any on also.

Makes about 30 cookies

10 dl spelt flour

2 tsp baking powder

1 tsp baking soda

2 tsp cinnamon

1/2 tsp ginger

1/4 tsp cumin

1/4 tsp nutmeg

3 tbs molasses

1 dl oil ( Coconut or rapeseed oil)

4 dl pumpkin (cooked)

2 tsp vanilla extract

3 tbs shelled hemp seeds (optional)

 

1.Pre- heat oven to 200C

2. Mix together first the wet ingredients, then the dry.

3.Use a tbs spoon, and spoon the mixture out on the baking sheet.

4. Cook for 12-15 minutes.
