These are soft, delicious, and a good alternative for buns if you don’t feel like waiting for them the dough to raise and all that
Makes 10-12 muffins
3 eggs
1 1/2 dl palm sugar
1 dl rye flour
2 dl sorghum flour
1 1/2 tsp baking powder
2 tsp ground cardamom
1/2 tsp ground ginger
1/2 dl coconut oil
1 dl orange juice
1 dl raisins
2 tbs palm sugar for topping
The other ingredients are opional:
3 tsp lucuma powder
2 tsp yacon powder
1. Pre heat oven to 200C
2. Whisk eggs and sugar together
3. In a separate bowl stir in the dry things and raisins.
4. Mix together the egg mix, and the dry mix, add in orange juice and coconut oil
5. Divide over the muffins cups, and sprinkle with palm sugar before putting them in the oven
6 Bake for 10-12 min.
Winter is here, and as I speak it is still snowing, yeay! Soon I can take out my cross country skies.
