healthy eating my way (allergy friendly)
So I had some salmon ( one of my favorite types of fish) left from the other day. And this is the recipe that I came up with. Its been a hectic week, only 2 more days until Christmas. Yeay. So dinner has been simple here lately.
When I cook for my mum and me, I make the food with no onion, and without a lot of spices, due to my mum and me not being able to use a lot of spices. My mum is even more sensitive than me. And I don’t want her or me to be sick after eating our food.
Back to Christmas, and the pre-christmas time (førjuls tid, as we say): Now everything is ALMOST ready. Christmas tree is outside, just waiting for the 23rd to come around. Food has been bought in, did not want to be that person on the 23rd running around, and standing in the never ending lines. And the cakes and cookies have been made. Lefse too, for those of you that knows what that is. Lefse is a very traditional Norwegian food. There are many kinds of different kinds, all depending on were in the country you come from. In our household we make about 2-3 different kinds. And I also tried for the first time to make “Melkekaker” almost the same thing as lefse, but different. But it is as the name says milk cakes.
Every year the last Saturday before Christmas our family gathers at my aunt, were we eat good food. Time is spent in the wooden hot tub that is heated by wood, and some drink Aquavit. And rolling in the snow if there is any. ( This year it was non). And then everyone goes in side for dinner. Smalahove ( the head of a sheap)is a traditional dish, that goes way back. It may not look its best, but it is very good. Almost taste like something els that we have called pinnekjøtt. Just close your eyes, and look away from the fact that it is a face on your platter, and it is very, very good.

I just made a mess out of mine, and then you can not see it. It kind of freaks me out. But the taste is so good. It was only my second time having this. But enough christmas and tradition talk.
Something is up with my camera today, it got blurry some how. Tried several times with no luck.
Makes 2 servings
2×125 gr salmon file
1 tsp salt
1 tsp lemon pepper
1 tsp mustard or dijon
2 tbs oil
Put all this in a plastic bag, and shake. Let sit for a little bit.
2 bacon strips pr fish file
1.Preheat oven to 200C
2. Roll the bacon strips around the fish, and put on aluminum foil.
3. Bake for about 20 minutes, or until bacon is crisp.
4. Let the fish cool of a bit, serve with rice and a salad.
