Cranberry Oatmeal Muffins

Pinnekjøtt is a traditional meal, some have it at Christmas Eve, but some like us, have it on New Years Eve.

After dinner we went to my aunts house, and spent some time with them before  going out and looking at all the fireworks


Sometimes you just have to enjoy some chocolate:) I made these muffins, that could also be turned into cookies. You can drop the flour, and just add more oats if you want to.

Makes about 12 muffins

1 dl spelt flour

2 dl oats

1 tsp baking powder

1 tsp baking soda (natron)

1 tsp vanilla sugar( or vanilla extract)

1/5 tsp salt

1/2 dl cacao nibs

1/2 dl coarsly chopped walnuts

1/2 dl dried cranberries

1 dl semi-sweet chocolate chips ( there are milk free once too)

1/2 dl melted coconut butter

1/2 dl palm sugar

1 egg

1 dl water


1. Pre-heat oven to 200C

2. Mix all you ingredients, and scoop into your muffin forms.

3. Bake for 10-15 minutes

4. Serve with a nice cup of tea or coffee.

    I’ve been looking for a new cranberry muffin recipe (it’s a little bland and flour heavy), I’ll have to give this a try! The one I typically use includes shredded carrots, which you might want to try adding.
