Cottage Cheese Biscuits

My mum made some homemade blueberry jam yesterday. Yum. So I had to have something to go with it. And what better than some fresh biscuits.

Makes about 4 biscuits

  • 2 dl spelt flour
  • 1/4 tsp himalaya salt
  • 1 tsp baking powder
  • 3 tablespoons ghee or unsalted butter, cold,
  • 1  dl  cottage cheese

Preheat oven to 200C

In a large bowl  add flour, salt and baking powder. Stir. Add in butter, and use your hands. Make sure all the butter is well mixed into the flour mix. Add the cottage cheese, and stir until everything is combined. Divide into 4 pieces, roll them between your hands until they are round. Put on a non-stick cookie sheet, or just a baking sheet. Bake until golden for about 12-15 minutes.
Let cool of for a bit.
