Fluffy American style Pancakes

The picture shows all that I used. The agave nectar does not go in, it is the optional topping. Honey also does the work.

The recipe for this is inspired by Jamie Oliver.

If you don’t make use of all the batter, you can put it in the fridge for a day or two.


2 eggs

2 dl (3/4 cup) spelt flour

1 tsp baking powder

2 dl (3/4 cup) milk ( I used a lactose free one)

1/4 tsp cinnamon

1 pear (washed and chopped)


Mix it all in a blender, or food processor.

Use butter if you like in your skillet, I used ghee. Which is dairy free, and a whole lot of other things.

Spoon the batter into the warm skillet ( medium heat), and cook for a few minutes on one side. I turn them around when the bubbles stops. and then on the other side. Until nice and golden. Serve warm, with a drizzle of agave nectar over.

    I haven’t had pancakes for a long time… now that I seen them here, I realised how much I missed them 😀

    These look wonderful! And I will be checking your blog a lot more frequently in the coming weeks, as we have just found out that my boyfriend has many food allergies we didn’t know about!

    Just a question for you – I have been told that ghee does have dairy in it. Is that true?

      The lactose in no longer in the ghee, in neither is the casein:) I wrote a short article about it, with some additional links. So if you click on the word “ghee” in the recipe you’ll come to it, or go to “articles, and under “health”.
