healthy eating my way (allergy friendly)

Corn pudding

This is something new to me. Corn and pudding, here pudding is normally a dessert, not a side dish to dinner. We tried it with some salad. There is sugar in this, but it could be taken out, without being missed at all. I hope you all have a great Sunday.

Serves 3-4 people


2 corn colbs ( cut the corn, and chopp it up)  (4 dl or  2 1/2 cup corn kernels)

2 tbs palm sugar

1/4 tsp salt

1 tbs spelt flour

2 eggs (beaten)

2 dl (3/4 cup) heavy creme ( I used a vegetable based one)

2 tbs rapeseed oil

1/2 tsp pumpkin spice (cinnamon, ginger, nutmeg and allspice)


Pre-heat oven to 200C

Mix all the ingredients together

Pour it into a prepared baking pan/dish.

Bake for about 30 minutes, or until  the top has a golden brown color.

    I like the pumpkin spice addition, great idea! I will have to try it!

      I always like to use a lot of spices in my food:)Pumpkin spice gives it a little more flavor:)
