Morning high protein oat pancakes

Yesterday on my walk I thought we would walk some where that  that I had not walked since I was a tad younger. My memory played tricks with me, as the road was nice and wide, and then ended up in a trail, some parts with snow, some without. It was a workout in itself.  Have you taken a look at my facebook page? If not, please do. Everyday I try to put out a different workout that I like, and some articles, or other blogs that I like. This is the hill I walk up and down every day with the stroller, it is just a part of it, as it curves behind were I took the picture. Right now its covered in ice, so pegs are needed, if you don’t do what the school children do, and sled down ( so fun).

We getting more and more ice. So excited.

This place is called “Kvalen” which means whale, can you see the whale?

Makes about  6 mini pancakes

Ingredients

1 dl (1/2 cup) oats

2 eggs  ( or 3 egg whites)

1 dl ( 1/2 cup) yoghurt naturel

1/2 tsp cinnamon

1/ 2 tsp vanilla extract

1 tsp yacon syrup or maple syrup

Coconut oil for cooking

———-

1. Put all ingredients in a blender  until smooth

2. Put a tsp of coconut oil in the frying pan, and cook your pancakes.

I ate mine with some agave nectar drizzled on top.

    Never realised you could make pancakes using oats. How interesting!

    Those looks like the perfect way to start a cold morning! Oh wait, I think they would start a summer morning deliciously too! ha ha.
