healthy eating my way (allergy friendly)

The ultimate breakfast muffin

As you know, I’m allergic to yeast. And I have been told to keep away from it 100% now for 2-3 months. And then going back to adding 1/5 of the normal amount when baking. But until then its yeast free.  Here are some healthy, yummy morning muffins. The original recipe I found on “Anja’s food 4 thoughts”.

Makes 6-8 muffins

Muffin mix

2 eggs

4 tbsp agave nectar

4 tbsp melted coconut oil

1 tsp vanilla extract

1/2 dl (1/4 cup) turkish yoghurt

1 carrot, grated

1 apple, with skin grated

1/2 dl (1/4 cup)cup raisins

1 dl (1/2 cup) oats

1 dl (1/2 cup) spelt flour

1 tsp baking soda

1 tsp pumpkin pie spice ( ginger, cinnamon, nutmeg and allspice)

1/4 tsp salt


1 tbsp butter

1 tsp spelt flour

1 tbsp palm sugar

2 tbsp oats

1 tbsp sesame seeds

2 tbsp pumpkin seeds

1 tsp agave nectar

1 tsp water

1)Preheat oven to 175 C (375F) and line or grease your muffin tins/forms.

2) Mix all the wet ingredients and set aside

3) Mix in the dry ingredients

4)Make the topping, it has an almost crumble texture

5) Fill the muffin tins 3/4 ways, and add a tsp of the topping.

6)Bake for 20-25 minutes, or do the “fork test”.

    I think I am allergic to yeast too 😦 I am trying to stay away, but it’s difficult sometimes… These sounds absolutely delicious, coconut oil… vanilla extract… apple… yum good start to a day 🙂

      Yeast is in so much stuff…realized that when I actually started paying more attention. Yes, its hard to stay away…These very good:) 🙂 Best a little warm:) 🙂
