Clean Eating Strawberry Shortcake Pancakes

This recipe I found on “Oh She Glows”. It looked so good that I just had to try my own version of it. Try it, and see what you think. This is total vegan, and vegetarian.  And if you don’t like avocados, switch it out with banana. I can’t eat bananas, so I try to avoid it. 🙂

2 Servings

2 dl (3/4 cup) spelt flour

1 dl (1/2 cup) shredded, unsweetened coconut

1 tsp baking powder

1/2 tsp baking soda

1 tsp pumpkin pie spice

1/2 tsp cinnamon

1/4 tsp salt

2 dl (3/4 cups) milk ( of your choice)

1/2 tsp vanilla extract

2 tsp agave nectar

Strawberry Soft Serve

1/2 ripe avocado

6 frozen strawberries

1 tsp agave nectar

For garnish

Blueberries

1)Mix the pancake mix together and let it “swell” for about 5 minutes.

2) Cook your pancakes

3) In a blender put in the ingredients for the “strawberry soft serve”

4) Layer your pancakes and the soft serve. Garnish with blueberries.

Enjoy!

    I have never seen anything like this! It sounds delicious. 🙂 Now do I go with avocados or bananas??? Hmmm. Maybe both. 😉
