Appel Streusel Muffins

I love muffins, in every shape and form:) And here is a new recipe.

This recipe is inspired by “Oh She Glows”. And this is very good dessert, or maybe together with a cup of tea.  They are the sweetest muffins I have made. It was just like a little piece of apple cake.  Try it and let me what you think:)

Makes 10 muffins


2 dl (3/4 cups) spelt flour

1 dl (1/2 cup) cane sugar

1 tbsp pumpkin pie spice

1 tsp baking powder

1/2 tsp baking soda( natron)

1/2 tsp salt

2 eggs (lightly beaten)

1/2 dl (1/4 cups) oil ( I used rapeseed oil)

2 apples  peeled, finely chopped



1 tbsp butter(unsalted)

1/2 dl (1/4 cups) cane sugar

1 tsp cinnamon

1 tbsp spelt flour (optional)


  1. Pre-heat oven to 175 C (350F).
  2. Mix together the dry ingredients in a bowl.
  3. Combine eggs and the oil, and stir into the dry mixture.
  4. Fold in apples.
  5. Fill greased or paper-lined muffin cups 3/4  full.
  6. In an own bowl add the ingredients for the topping.Should be like coarse crumbs.
  7. Sprinkle 1 teaspoon over each muffin.
  8. Bake  for 30-35 minutes or until muffins test done.
  9. Cool off before moving from muffin cups.
