healthy eating my way (allergy friendly)
Chia seeds are so healthy, and have so many benefits. To mention some things:
Lemons are naturally high on vitamin C.
Makes 16 muffins
2 cups ( 4.5 dl ) spelt flour
2 tbsp chia seeds
1 tsp baking powder
1/2 tsp baking soda
1/2 cup (1 dl ) melted coconut butter
1/2 cup (1 dl) honey
zest of one lemon
3 tbsp lemon juice
1 tsp vanilla extract
1 cup (2 dl) Greek yoghurt natural
Preheat oven to 400F (200C)
Mix all the ingredients together, and fill up the muffin cups 3/4 of the way.
Bake for 20-25 minutes.
Let cool of. Add creme frosting if desired.
