healthy eating my way (allergy friendly)

Grilled Turkey & Cheese Waffle Sandwiches

As you know, I don’t eat a whole lot of bread, so I was thinking about a way to still make a sandwich. And this is the result.  I used turkey hot dogs that I sliced, but ham  etc. will also do the works.

Serves 4 

3 eggs

1 tbsp melted coconut oil

1 tsp baking soda

himalayan salt and pepper to taste

1 1/2 cups (3.5 dl) spelt flour

1 1/2 cups (3.5 dl) cultured coconut milk ( option is buttermilk)

1 tbsp ground flaxseeds

2 tbsp dijson mustard

4 slices cheese of your choice

8 slices of ham, or 4 turkey hot dogs in slices

12 spinach leafs

Preheat oven to 450 F (230C)

Preheat a waffle iron

Meanwhile , in a large bowl, add all the ingredients together ( minus the dijon mustard, cheese, spinach and hot dogs). Whisk until smooth.

Spray the waffle iron with cooking spray. Cook your waffles until golden

Layer to waffles with dijon mustard, cheese, spinach, and the meat.

Bake in oven for 10 minutes, or until the cheese has melted.
