healthy eating my way (allergy friendly)
So I was sitting and thinking…..Maybe I should change my name on my blog. As I said in the “About me” article. This blog is about healthy alternatives to add to your life. Any thoughts? I’ve had this blog for almost 10 months now, maybe it’s time for a change. Let me hear it!!!!

This time around I’m again sharing some pics from the Grand Canyon, and one pic of my son and me.
It was my first trip to the Canyon. And we went to the West Rim. This part is not free like the South Rim. But you have the Skyview, which is a glass bridge over the Canyon. It was SOOOOOO cool.
There is nothing like traveling. But then again living out of a suitcase gets old after 5 weeks, especially with a almost 1 year old at the time. ( He turned 1 last week. Time flies)
We went to the West Rim of the Grand Canyon. If you love your car. Don’t go here. What it failed to say on the big sign for it was that 16 miles (26 km) was a dirt road. A dry river bed. One car that we saw stopped, and turned around.

Back to the recipe. Since spring is in the air, the snow is gone. It is BBQ weather. Love it. So this past week we have grilled a lot. This was a side dish that I had with one of our dinners. Serve it with some sour creme if its gets to spicy. It takes of the edge. Or remove the seeds from the chili.
4 carrots ( in slices)
1 tbsp canola oil ( in Norwegian: Raps olje)
1 red chili pepper ( for less spicy take out the seeds)
2 cloves garlic, chopped
1/2 tsp slat
1 tsp cayenne pepper
Prepare your grill. While you wait for the grill, prepare your side dishes.
Take the carrots and cut in half, and then in half again.
Layer the aluminium foil doble, and put the carrots in the middle. Sprinkle the garlic, cayenne, chili, salt and oil over. Fold it up.
Leave on grill for 30-45 min. Do the fork test to see if they are done. You can also bake this in the oven.
