healthy eating my way (allergy friendly)

Sweet Apple Muffins

It’s the weekend and I craved something sweet. Came up with these.

Makes 18 muffins

1/4 cup (1/2 dl) melted butter

2 apples peeled

1 cup (240 ml) coconut milk (the beverage kind)

1/2 cup (1 dl) kefir

1/4 cup (1/2 dl) orange juice

3 eggs

1/4 cup ( 1/2 dl) brown sugar

2 cups (4.5 dl) spelt flour

1 tsp baking powder

1 tsp vanilla extract



  • Preheat the oven to 350 F (175 C)
  • In a blender or food processor add the apples, milk, kefir and orange juice
  • In a separate bowl whisk the eggs and sugar until fluffy ( about 5 minutes)
  • Add in the milk mix, and then the remaining ingredients, all while stirring.
  • Fill your muffin cups 2/3 way.
  • Bake for 20 minutes.
