Clean Eating Maple Syrup Muffins

So I craved something sweet. And came up with these. I used sorghum flour which has a certain flavor to it. You can use whatever flour you want:) All products that I use is organic. And without GMO.

Makes 12 muffins

2 eggs

1/2 cup (1 dl) maple syrup

4 oz (113 gr) apple sauce

1/2 cup  (1 dl) coconut milk

1/4 cup (1/2 dl) oil

2 cups ( 7 dl) sorghum flour

1/4 tsp salt

2 tsp baking soda

1 tsp vanilla sugar or 1/2 tsp vanilla extract

honey (optional)


Preheat oven to 400 F (200 C)

1.Whisk the eggs until fluffy.

2. Add maple syrup and apple sauce and whisk for 1-2 min.

3. Add the remaining ingredients minus the honey

4. Pour your batter into pre oiled muffins cups or pan. And if you want to drizzle some honey on top of the 2/3 filled cups.

5. Bake for 20-25 minutes. Keep a eye on the muffins.
