healthy eating my way (allergy friendly)

Veggie Dip

The other day I was walking down the organic section and I found some artichokes. I boiled them in some salt water, and then I just needed some dip to go with it. So I came up with this recipe:


1 cup (2.5 dl) yoghurt

1 tbsp sour creme

2 green onions

1 tbsp dijon mustard

1 tbsp apple cider vinegar

1 clove garlic

1 tbsp olive oil

1/2 cup (1 dl) peeled and cubed zucchini

1 tsp dried thyme

Juice of 1/2 lemon

Salt & pepper to taste

Mix everything in your blender or food processor. And you have a lot of dip. Freeze or keep in refrigerator.


So this is going to be the last post this week. We are headed to the middle of no where this weekend. Hiking, and living in a cabin.  Love it!!!!
