Something Norwegian Again- With A Twist: Rice Porridge w/oatmeal (Risgrøt med havregryn)

My husband always says that before he met me thought that porridge was for “Goldielocks and the three bears”. In Norway we eat porridge. Rice porridge is a dinner porridge that we eat. I’ve made it here, but I changed it up a little this time around:

4 Servings

3/4 cups (2 dl) rice (in Norway we have a special white porridge rice, but you can use a dinner rice)

1 1/4 cup (4 dl) water

4 cups (1 l) coconut milk (beverage kind)

1/2 cup (1 dl) oatmeal

1/4 tsp salt

1 tsp cane sugar

1 tsp butter (of your choice)

2 tbsp sour creme

Cinnamon & Raisins (cranberries if you like) for topping


1.In a large pot, boil water and salt and add the rice

2. Let the rice boil on low heat until  almost the water is gone.

3. Add in the coconut milk, sour creme, sugar, oatmeal and  butter .

4. Stir.

5.Let the rice boil on low heat for about 45 minutes. If the porridge gets to thick, add more fluids!

6. Serve with cinnamon and raisins!
