healthy eating my way (allergy friendly)

Potato and Onion Omelet

Wanted something quick. And then I remembered something that the family that I used to live with in Spain used to make. It’s very simple.

2 Servings

2 potatoes, peeled, and cubed

1/2 red onion, chopped

1 clove garlic, chopped

1 tbsp extra virgin olive oil

6 eggs

1/2 tsp bouillon

1/2 tsp sea salt

1/2 tsp pepper

Have the eye on medium heat, add the oil. And heat it up. Add potatoes, onion and garlic. Let simmer until potatoes start to get soft.  5-10 minutes depending on how big you chopped them.

In a bowl whisk together the egg and the spices. Then add it to the potato mix, stir a little before you put the lid on it. Cook for 3-5 minutes, or until omelet is done. Serve with a salad.
