Clean Eating Oatmeal Muffins

This was growing on the mountain next to a little waterfall. And I just had to take a picture.


I was craving muffins one morning. So here is the very simple recipe.

1 cup  (2.5 dl) dry oatmeal (
1 cup  (2.5 dl) sour milk or yogurt or buttermilk
2 eggs
1/4 cups (1/2 dl )agave nectar
4 tbsp oil
2 dl (3/4 cups) spelt flour

1/2 tsp baking powder

1/2 tsp baking soda (natron)

a pinch of salt

In a bowl combine the oatmeal and buttermilk or sour milk.  Let it stand for a few minutes. Add the egg, nectar and oil. Beat  well.  Add the flour, baking soda, salt and baking powder. Mix again. Spoon the batter into a dozen well oiled muffin cups. Bake at 400 degrees (200C) for about 10-15 minutes. Serve hot.
