Savory Plum Cake

 

There has been very few posts here the last couple of weeks. But my time here in Norway is coming to an end (for now), and then I head back to Alaska.

Mean while: Yes, plums are in the seasons, and we have plenty.  So I  got told I needed to make a cake, just like apple cake, but with plums. So I did. And the result ended up extremely well if I can say.

20 plums

100 gr (3.6 oz) butter ( oil can be used to make it healthier)

3 eggs

2 dl (3/4 cups) cane sugar (agave nectar or honey can be used)

1 tsp vanilla sugar/vanilla extract

2 dl (3/4 cups) spelt flour

1 tsp baking powder

powdered sugar/confection sugar for decoration (optional)

Cut the plums in half, and remove the stones.

Preheat oven to 175 C (350F).

Add some oil to you cake pan (dish) that you are using for the cake. ( That sentence might be a just a tad influenced by my Norwegian). Sprinkle a little flour in the bottom and on the sides of the dish.  Spread out the plums so that they cover the entire bottom. 

Melt the butter, and set it a side to cool off. Whisk eggs and sugar together until it is light and fluffy.  Add flour, baking powder and vanilla sugar/extract.  And stir carefully. Add in the butter.

Pour the batter over the plums. And bake in the oven for 15-20 minutes. Or until the cake is all the way cooked through.  Let cool off. And sprinkle with powdered sugar before serving if desired.

This cake keeps in the refrigriator for a couple of days.
