healthy eating my way (allergy friendly)
One of my friends gave me this idea. And they turned out great.
Makes 12-15 large muffins
1/2 cup (1 dl) coconut sugar
3/4 cups (2 dl) plain yoghurt
1 1/2 cups (3.5 dl) spelt flour
1 tsp baking powder
1/4 cup (1/2 dl) coconut oil
1 tbsp cinnamon
1-2 apples finely chopped
1.Preheat oven to 400 F (200 C)
2.Whisk egg and sugar until fluffy and add the other ingredients
3. Bake for 15-20 minutes or until golden
