1/2 cup (1 dl) butter ( or oil to make it healthier)
1 cup (2.5 dl) coconut sugar
1 tsp vanilla extract
2 mashed ripe bananas
1/2 cup ( 1 dl ) milk of your choice
2 cups ( 5 dl) all-purpose flour ( I used spelt flour)
1 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1. In a large mixing bowl, softened butter and sugar.
2. Add the eggs, vanilla, bananas and milk.
3. Sift the flour, baking powder, baking soda and salt; add to banana mixture. Fill your muffins cups of choice either paper-linned or oiled muffins cups cups two-thirds full.
4. Bake at 350F degrees (175 C) F for 15-20 minutes or until a toothpick comes out clean. Remove to wire racks to cool completely.
