Pumpkin Cookies

So here lately it’s been crazy busy. Between teaching and prepping for classes. Volunteering  at different places and life in general. So there has been almost no posting. There has been cooking in the kitchen, but no posting. But now I’m gonna try to at least post a couple of times a week:)

This recipe is inspired by “a scent of Christmas – healthy pumpkin cookies” one of my favorites….



We’re back in the season of pumpkin. Yeay!!!

Makes 15-18 cookies

2.5 cups (about 600 gr) coconut sugar

2 eggs

3 tbsp maple syrup

1 tbsp yacon syrup

2 tbsp chia seeds (optional)

2 tsp baking powder

1 tsp baking soda

2 tsp cinnamon

2 tsp vanilla extract

1 tsp cardamom

1/2 cup ( 1 dl) oil of your choice


1.Preheat oven to 400 F (200C)

2. Mix together first the wet ingredients, then the dry.

3.Use a tbs spoon, and spoon the mixture out on the baking sheet.

4. Cook for 12-15 minutes.
