Norwegian Fish Soup

So there are a looooooooot of fish soup recipes out there as there are Norwegians. And I’m one of them. And even I have several different ways of making fish soup.  I made this one with flounder filets, but you can use what ever white fish you have available fresh or frozen.

Makes 5-6 servings

Fish and Fish Stock

3 bay leafs

5-6 whole pepper corns

1/2 tsp salt

1 liter  ( 33.8 oz) water

450 gr (15.9 oz) Flounder/White fish cut in chunks

The Soup

7.5 dl (23.2 oz) fish stock

2 carrots chopped

2 garlic cloves, chopped

4 green onions, chopped

1 tsp dill

1 tsp basil

1/2 tsp curry

1 tsp salt

1/2 tsp pepper

1 pck sazon goya seasoning (Optional) (Coriander and Annotte mix)

1 cup (2.5 dl) milk of your choice  ( I used milk with  high fat %)

Prepare a pan with the fish stock ingredients. Bring it to a boil, and then simmer for 2-3 min. Until fish is cooked. Take of heat. Sift of the fish, bay leafs and peppercorns. Save the fish stock.

Put the fish stock in a separate pan, add all ingredients except for the milk and fish, and let cook until carrots are soft. Add milk and fish, and turn down the heat. Let simmer for 10-15 minutes.

Enjoy! Thank you for stopping by my blog. I hope you found some inspiration.
