healthy eating my way (allergy friendly)
This is a fresh and yummy dessert, or just a snack.
Makes about 4 servings
1 pink or red grapefruit, washed
2 oranges, washed
Juice of one fresh lemon
1/2 tbsp each of cinnamon and nutmeg
2 tbsp maple syrup
4 tbsp vanilla kesam/vanilla quark(optional for each serving)
1/2 dl red berries such as strawberries or cherries ( in this version I have used cherries) (optional)
1.Remove the peel from oranges and grapefruit. Remove the fruit flesh from the tough membranes.
2. Put the fruit flesh in a bowl
3. Squeeze lemon juice over. Add the other ingredients, stir. Put the bowl in the refrigerator for about 1 hr to let all the flavors blend.
Saturday I am doing my last race here in Alaska before I go back to Norway. Think this snowshoeing race is going to pretty steep!!!!
