healthy eating my way (allergy friendly)
So for a brief second we had summer here. But then winter came back. Summer!!!! Where are you, I miss your sunny face. Todays recipe is simple to make, and there are several ways to make this one.

After a long day, sometimes one just want to make something quick, but nutritious. These “fiske pakker” ( Fish packets), are very simple, but so good.
2 peeled potatoes
1 carrot (shavings or chopped)
1 green onion ( vårløk) chopped
Juice of 1/2 lemon
2 salmon files ( you can use any fish)
1.Pre-heat oven to 200 Celsius (350 F)
2. Chop the peeled potato, and carrots
3.Chop the green onions
4. Put potatoes, carrots, fish and green onions on a double layer aluminum foil.
5.Sprinkle salt and pepper over, and then the lemon juice.
6.Wrap up the aluminum foil, and put the wraps in the oven.
7. Bake for about 40 minutes.
