Giant, Chewy Cookies


This was from my train run last night. In September I am running my first ever full marathon. As some of you know I ran my first ever half marathon 9 weeks after having my second son. But enough about that. It is weekend, and that is why I made some cookies.


There can be added chocolate chips, raisins, walnuts, or whatever your heart desires.

Makes about 12 cookies:


7 cups (7.5 dl) spelt flour

1 tsp baking powder

1/2 tsp baking soda (natron -Norwegian)

1/8 tsp salt

1 cup (2.5 dl) cold butter, cut into cubes

1 cup (2.5 dl) cane sugar, honey or agave nectar

2 eggs

1 tsp vanilla extract


1. Line two baking sheets with parchment paper (bakepapir- Norwegian), and set aside.

2. Beat the cold butter on medium speed, until is has tured into a mass. Add sugar ad eggs. After about 1 minute, add vanilla extract.  Reduce the speed and add the remaining ingredients.

3. Divide into 12 even pieces, shape into a ball. Place them evenly spaced out on the parchment paper. Refrigerate for 30 minutes.


4.While you have the dough in the refrigerator preheat the oven to 400 F (200C)

5.Bake for 18-20 minutes, or until golden on top. Let cool of for 5 minutes.
