Cauliflower Soup




First picture is from our hike to “Folgefonna” a glacier in Norway, in out backyard. Second picture is flying back to Alaska.

It is cold here in Alaska compared to Norway, with a  80 F in Norway and 46 F here in Alaska, there is a difference. With fall, and colder weather, comes also my love for soup. This time around I made cauliflower soup. Heart warming and good!

Makes 4 servings

2 whole cauliflowers

3 cups  (7-8 dl) water

a pinch of salt


2 cups (5 dl) vegetables broth (from cauliflower)

1 tbsp flour

2 tbsp oil

1 beef cube, crushed

1 tsp curry

salt, pepper to taste

3 tbsp sour creme

1 cup (2.5 dl) milk of your choice

1 egg yolk


  1. Add the water and cut up cauliflower in a pan, with a pinch of salt. Let cook until soft
  2. In a different pan, heat up oil, and stir in flour.
  3. Add the liquids
  4. Add sour creme
  5. Add spices. Taste.
  6. Bring to boil, and let simmer for about 10 minutes.
  7. Add the egg yolk, stir well, and let simmer for an other 3-5 minutes.
  8. Serve the soup, and add as much cauliflower as desired to each bowl.
