healthy eating my way (allergy friendly)
I got some new favorite snacks! Naturebox. It’s healthy and affordable, my favorite is the almonds with blueberry powder on them. LOVE!!!!!!
So for the recipe of the day! Everyone is always busy, and I like to stay busy. That is why with a 6 month old and a 2.5 year old I like to make quick lunches. This one can even be turned into a dinner with some rice on the side if you want too. If you want to make it cleaner use egg whites in stead of the whole egg. I use the whole egg for nutrition purposes.
My husband had this with bread on the side! So savory and so good. Rich in protein too!
1 tsp ghee
2 cloves of garlic, minced
1/2 cup (1 dl) green onions (vårløk)
2 cans of tuna ( I use the one in water)
salt and pepper to taste
1 tsp hot curry (madras)
6 tbsp coconut milk (unsweetend)
Add the ghee and melt it in a pan.
Add the garlic and green onions. Sauté.
Add in the tuna and let simmer for 1-2 minutes. Stir.
In a separate bowl. Whisk together the eggs, coconut milk and spices. Add to the pan.
Stir until eggs are done!
