healthy eating my way (allergy friendly)

Meatless Pizza Puffs


This can be used as a dinner thing, or just a lunch. If you love pizza, these are the right for you. You can add meat if you want too.


Makes 12 muffins

1 cup frozen golden corn ( cook with water until done) Set aside

1/2 cup  ( 1 dl) sorghum flour

3/4 cups ( 2 dl) spelt flour

1 tsp baking soda

3/4 cups ( 2 dl) coconut milk

2 eggs

1 tsp sea salt

1/2 tsp pepper

2 tsp basil

2 tsp oregano

1/2 cup ( 1 dl)  parmesan cheese

1/4 cup ( 1/2 dl) grated mozarella  cheese


Preheat oven to 350 F ( 175 C)

1. Mix the egg and coconut milk

2. Add the flours

3. Add the spices and chees

4. Add the corn

5. Divide the dough out in oiled up muffin tins. 1/2 full

6. Bake for 10-12 minutes or until golden

I served this with a homemade pasta sauce. But you can use any marina that your heart desires
