Basic Raw Vanilla Chia Seed Pudding – And some MammaChia

I love a lot of things, and on of them is chia seeds. My new thing is when I run I have my mammachia squeeze bags, so delicious.  I just said the other day that there should be squeeze bags, for busy grown ups, not just kids, and there they where. I ordered my online, and it was quick. 1200 mg of Omega-3 in one pouch.  Better than taking a pill if you ask me. Now that we are headed straight into the “dark”season.


The important thing to remember when making chia seed pudding is:

3 tsp chia seeds required 1 cup of liquid.

So if I was just making a small batch this is what I would be doing.  The liquid can be any plant-based liquid, almond, pistachio, coconut milk. It’s all up to your imagination.  I would normally make this and let it set in the fridge for 1-2 hrs before eating it.  Letting the chia seed swell up.

My son got a taste of the chia when I was almost ready to put it in the fridge. He didn’t even smile about it, just grabbed them and left! “My nommenomm” as he said!



This recipe makes 4 servings

1 cup chia seeds

4 cups coconut milk ( I use Silk, as this is a non-GMO brand)

2 vanilla bean, split down the center, and scrape out the seeds. Or just 2 tsp vanilla extract

2 tbsp maple syrup (agave nectar is also a good alternative)

When I make a larger portion (s) I use my blender to mix it all together.


I start my adding the milk, vanilla bean and maple syrup. Blend it together on a low setting, I use my “stir” setting on the Kitchen Aid.

Add in the chia seeds. In blends quickly.

Transfer the whole thing to a mixing bowl – give it a stir.

Wait a minute, then stir. Wait an other 5 minutes , stir, and then an other 5 minutes and stir. Let the whole thing sit for about 1 hr, before you split it up into your storage containers.

It also taste really good with almond extract in it. And you can turn it into a mid-morning snack, lunch or breakfast with adding some granola, blueberries, cacao nibs or goji berries.

I re-used my organic avenue bottles. Raw juice. LOVE! Need to buy some more jars.  This was the bottles originally.
