Black Bean Vegetarian Burgers – Gluten & Soy Free!

So a huge thing with me is wheat flour. And the other big thing is Soy. I am allergic to both. So there is non to be found in our household. Which is good. Since now there is an ongoing debate about the pro and cons for soy. It’s not looking really good!

As you know I was a vegetarian (pesco- lacto) meaning I had fish, and dairy (lactose free) products for many years, but then pregnancy hit, and my body was like “GIVE ME MEAT”.  And now it seems like my craving for just veggies has come back. Meat far-well for now.

Went to the store to see what the vegetarian alternatives where for burgers. And ALL of it had soy in it in one way or an other. So  I did what I do best. I made it from scratch.

My husband had his with some bread. I don’t eat plain bread, so it was just sweet potato fries, spinach and tomatoes for me.

Makes about 12-14 patties

1.5 cups ( 3.5 dl) black beans, cooked, and drained  (option is to use cans)

1/4 cups ( 1/2 dl) of the black bean “juice”

1/2 cup ( 1 dl) chopped, green onions

1 tsp sea salt

1 tsp pepper

2 tsp dried parsley

2 tsp basil

2 tsp red pepper flakes

2 eggs

2 tsp  ground psyllium husk ( makes it stick together better)

1 tsp seasoning salt (piffie)

Taste to see if you want to add more spices!

Alternative things you can add:

carrots

kale

garlic

I mixed it all in my Kitchen Aid blender. Until smooth (almost).

I use a glass of water which I dip the tablespoons in before I fill it up with the burger.

Eye on medium heat. Dropped it into a heated skillet with your choice of oil, and pressed them slightly down. Cook for 5-6 min each side, or until golden.
