healthy eating my way (allergy friendly)
This is a re-post of one of my older recipes, but this is soooo good! That if you’ve never tried it, you should at least try it once!!!!
First of all I would like to say thank you, for stopping by my blog, and taking the time to read it. And for giving me good, wonderful and positive feedbacks.
So todays recipe is a sweet one.
When we were in South-Korea, we went to a couple of Brazilian restaurants. And I was always looking forward to the end of the meal, when the waiter came out with a whole grilled pineapple. It was the best part of it. So I tried to imitate it. Even though I did not have a grill available at this time of year. I fixed the oven, and put it on the grill setting.
Serves 2-3 people
1 dl (1/2 cup) palm sugar
1 tbs ground cinnamon
1 lime, juiced
Remove the skin from the pineapple, and cut it into quarters lengthwise. Remove the core. Put it all in a bag, and let it marinate in the sugar, cinnamon and lime juice. Marinate for 30 minutes.
Cook in the oven or grill until a little soft, 10-20 minutes.
Best served while hot, maybe with some ice cream on the side.
