healthy eating my way (allergy friendly)
So I’ve been getting questions about me being vegan. I do eat a lot of vegan foods, some raw foods, but like some of you know. Earlier, I was a pesco-lacto vegetarian. And then I became pregnant ( my first pregnancy) and I started eating some meat. These days when I eat there is a loooot of vegetables, and there is fruit too, the fish we have caught our selfs, and meat is served about once a week. If I could get it my way, it would be down to zero, and only fish.
I like having something in the house that is easy to grab with me when I am on the go. Yes, I do have a lot of snacks aka dried fruits, seeds, nuts, granola, raw bars, macrobars etc.
That is why I decided on making these bars. Quick and easy.
Makes about 14-16 squares
1 1/2 cup (3.5 dl) spelt flour
3/4 cups (2 dl) quick oats
1 tsp baking soda
1/2 tsp sea salt
1/2 cup (1 dl) coconut oil (melted)
1 1/2 cup (3.5 dl) applesauce
1 ripe banana
1 tsp vanilla extract
1/2 cup (1 dl) dried cranberries and blueberries
1 tbsp coconut sugar
1/2 tsp cinnamon
Preheat oven to 375 F ( 190C)
Combine the spelt flour, oats, baking soda and sea salt in you food processor/blender. I use my Kitchen Aid blender for everything! Love it!!
Mix in the coconut oil and the agave nectar. Add applesauce, banana and vanilla extract.
In a separate bowl stir together the cranberries, blueberries, coconut sugar and cinnamon.
Spoon half of oat mixture into an oiled 8-inch baking pan; pour cranberry mix over top, and spoon remaining oat mixture over filling, spreading evenly.
Bake for 30-35 minutes, or until golden.
Cool off. Take out of pan, and cut into even squares.
So good!!!!!! And way better for you than some of those bars you buy at the store.
