Morning Muffins – Toasted Sugar Muffins


1/2 cup ( 1 dl)   butter, melted /oil
1/2 cup ( 1 dl) cane  sugar
2 egg (preferably room temperature)
1 1/2 cup (3.5 dl)  light spelt flour
1 1/2 tsp baking powder
1/2 tsp salt
1/2 tsp ground nutmeg
1/2 cup (1 dl)  milk of your choice
Topping (option: cut topping in half*)
1/2 cup (1 dl) cane sugar
1/2 cup (1 dl)  butter, melted/oil
1 tsp cinnamon

Preheat oven to 350F ( 175  C)

Mix together all the dry ingredients. Add the wet and stir.  Fill up the sprayed/oiled muffin tins with cooking spray 2/3  full. I mixed the topping: melted the butter, and mixed in the sugar and cinnamon. And spread your desired amount on top.  Bake for 20-25 minutes. Or until the edges starts get golden.
