Carribean Dumplings in coconut milk with cassava, plantin and carrots

So since I have not fixed the whole picture thing.  Here is the link to my instagram account and the picture. It turned out really good. Inspired by one of my moms Caribbean recipes.


2 tbsp oil of choice for cooking

1 can organic coconut milk

3 1/4 cup /8 dl water

2 cloves of garlic

1/2 leek chopped

1 sweet potato chopped

3 carrots chopped

1 cassava cleaned and chopped

1  ripe plantin chopped


Add  1 tsp each salt, pepper, cumin, garam masala

1 cube vegetable based bouillon

1 star anis

5 cloves


Boil for about 20 minutes, or until the vegetables starts to get soft. In the mean time make your dumpling dough


1 cup spelt floure

a sprinkle of salt

1/2 tsp nutmeg (or 1/4)

1 1/2 tsp aluminium free baking powder

3/4 cup luke warm water


Stir it all together.

Use  two tablespoons to take out the dough, and drop the tbsp sized dough in the pan. Then you put the lid on. Don’t lift the lid up to see if they are done. Let it simmer for 20 minutes. Take of the heat and let sit for a couple of minutes before taking the lid off.
